We adore wraps but don’t want the extra carbs. Enter the lovely long sheets of “veg” that have taken wraps to a whole new level. Even sweet potato, cut and brushed with EVO and thrown on the grill pan for a quick sear/heat/soften makes the best wrap imaginable. Take that burger, a bit of cheese, fresh sweet pea shoots and hummus and wrap it up in the sweet potato wrapper and you’ll gladly give up that carb heavy bun! Zoodles (Zucchini noodles) with pesto and toasted walnuts came out perfectly. How about a unique take on breakfast with delicate sheets of Granny Smith apples stuffed with rolled oats, pecans, craisins and honey then baked in the oven and topped with Greek yoghurt?The only difficulty I’ve had is with butternut squash but I’ve read many other reviews that suggest this is one of the toughest ones to manage due to the hollow seed-filled core. Despite the challenge, I used just the top solid part of the squash and made an incredible butternut squash lasagne filled with coasrely chopped oyster mushrooms in a mornay sauce and finished with fried sage leaves and fresh Grana Padano…can I honestly say it was more satisfying than my homemade lasagne noodles? Yes! This is a game changer and I’m looking forward to playing and creating countless other beautiful and flavorful recipes with the new attachment.

We are on low carb diets and frequently replace pasta with eggplant and zucchini. This attachment works well on a large, fat zucchini fresh from my garden, but I have had no luck with eggplant — too soft such that the skewer just spins inside the veggie. I will try one more time by first peeling the eggplant and then VERY SLOWLY allowing the blade to contact the vegetable to see if that makes a difference. Waste is also a problem, because a cylinder of veggie about 3/4 inch thick remains when the device has finished cutting off the sheet. One must plan ahead as to how one can use the left over cylinder to avoid wasting it. Also, you can reduce waste by selecting fatter specimens of a veggie and specimens of a length close to 4 1/2 inches or a whole multiple thereof. I can allow zukes to grow to the appropriate size in my garden before harvesting them, but most store bought zukes tend to be too small and of the wrong length to be used efficiently.

There is no vegetable that is perfectly cylindrical and smooth, so the blade will engage and rotate until the vegetable has been shaved to the PERFECT CYLINDRICAL VEGETABLE. As soon as you see the shavings start to become sheet form (short shavings become longer shavings) gently release the attachment locking lever to let the machine do its thing. When I got this I actually had no idea what I was going to do with it but since I had never had an attachment for my kitchen aid I wanted to give it a try. First off this is totally easy to connect to your kitchen aid , just unscrew the bolt and plate on the front and it pops right in. The instructions were easy with pictures and took me about 2 minutes to hook it all up. It includes two adapters, one for hard foods like potatoes and apples and one for soft like cucumbers and zucchini. There are also two sliced options that are either 1.3mm thick or 1.8mm thick. The first thing I put on was an apple and set it to speed number 2- it recommends that for whatever you are doing. It took about 20 seconds to slice a large apple. So fast!! We tried to video it and honestly it was almost too quick lol. It came off in beautiful sheets and dropped nicely on the plate. My kids grabbed it right away and thought it was super fun to eat that way. Hoping the same will go for veggies! We’re also think we can use this to slice apples to dehydrate for future snacks! I’m just so excited about all the things you can do with this and would absolutely recommend it. Seriously it’s so fun and easy and if it makes the kids eat healthy food then I am on board!

This is one of the most innovative attachments I’ve ever used on my Kitchen Aid mixer. I make a lot of pasta dishes and add loads of vegetables to my dishes. I used cucumbers, squash, potatoes, peaches, plums and pears and successfully sliced these food items into consistent, even with little effort! It takes a bit to comprehend the instructions, but once you begin the process, it comes very naturally. When you process vegetables, it’s best if you purchase them in lengths of 6 inches or less and wide, if available. For instance, if you buy an 8- or 10-inch length cucumber, you will want to cut it up into sections of 4 inches or less so it can be easily mounted on the attachment.If you are making quiches or lasagna, the processor does an outstanding job of processing slim sheets of vegetables.
